A New York-born producer of small-batch charcuterie, the products are inspired by the transformative powers of salt, air flow, temperature, humidity, and time—elements celebrated in cultures around the world. With the right combination of these elements, highly perishable raw meat is placed in the temperature/humidity zone where it is most prone to perishing, yet the opposite occurs—preserved indefinitely, elevated in value, and made delicious.
Charlito’s Cocina is also inspired by the cultural mosaic of New York City, where people from all over the world come together, complementing one another's experiences to create something new and beautiful.
The goal is to make people feel good, offering a vehicle for connection and enjoyment of good food. Celebrating different ways of thinking, keeping things interesting, and elevating charcuterie assortments, products are created with sustainably sourced raw materials, transparent ingredient statements, and old-school techniques.
