The 'Soak-Sprout-Dehydrate' Process:
1) Soak: First, they soak their nuts in purified water for up to 48 hours, which activates germination or 'sprouting'. The nuts swell up to 50% in this step.
2) Sprout: As the nuts sprout, they shed phytic acid. Phytic acid is what blocks human digestic enzymes from doing their job. This step of the process also acticates the nutrients in nuts. The result is an easier to digest + more nutrient dense nut.
3) Dehydrate: Finally, to achieve that clean crunch, they dehydrate their sprouted nuts at low temperatures to preserve nutrients. In comparison to roasting, no oil is necessary in dehydrating.
