Pearl Street's on a mission to make quality, sustainably-sourced caviar accessible to anyone who wants an experience that is indulgent and healthy, new and timeless, elevated and approachable. The Company Pearl Street sources all of their caviars from farms (wild sturgeon is ILLEGAL in USA as of 2007).
They work exclusively with farms that are located on natural waterways with high water flow. Waterways akin to what the Hudson River was long ago when it was a major global source of sturgeon and caviar. This means the fish are exposed to the minerals and vitamins that sturgeon find in the wild.
The lakes are fed by rivers in high-elevation forests. To maintain structure (firmness/pop) and flavor they only harvest in cold-water months. Once the product is received directly from the farm, their team of three caviar specialists nurture, turn, and age the caviar so that it has the optimal flavor, maturity, and presentation for their partners.
When an order is received, they then pack the tins and send as desired. their caviar is just the eggs and a little bit of salt (salt from the Alps). That’s it. Sturgeon caviar is Not Pasteurized. Sustainability is a core tenet of PSC, from sourcing to packaging.
For each domesticated sturgeon they use, their farms’ hatcheries also fertilize eggs and contribute fry (baby sturgeon) to the Amur and Black River systems, to revive the wild populations in native waters. Their farms favor local and organic feed when available.
They receive product at our facility in Brooklyn, age, treat, select, and pack it onsite, and ship using low-grade (not fit for textiles) natural wool for insulation. Their icepacks are the least environmentally impactful that are available, according to our most recent research.
They maximize the environmental efficiency of their small footprint. For factors outside of our direct control, they tap their experience and the knowledge of our network to ensure that their investment is aligned with our ethos and drives environmental innovation in aquaculture.
