Yolélé was founded by Senegalese chef, cookbook author, and restaurateur Pierre Thiam. He had the vision to create a more drought-resilient and prosperous food system in West Africa and began by introducing the nutrient-dense ancient West African grain fonio to the world. Africa’s oldest cultivated grain is truly revolutionary: gluten-free, low Glycemic Index, and high in important amino acids and nutrients, it also is a lifesaver in regions where it grows.
