Underpass is a semi-firm raclette-style cheese. The name raclette is derived from the French word "racler" meaning "to scrape" and is traditionally melted and then scraped over potatoes, pickles, and meats in the Alpine regions of France and Switzerland. These 12 LB wheels are aged for just 3 months making Underpass a decedent crowd pleaser. Underpass is great melted over potatoes, in an ooey-gooey grilled cheese, or simply for snacking. Pairs well with a sparkling Rose, stouts, and candied walnuts.

East Hill Creamery is run by Gary and Betty Burley who in 1981 started East Hill Farm with just 100 acres and 18 cows. With the help of 4 of their children, they now milk 1,300 cows on over 1000 acres and that fantastic, grass-fed milk is what East Hill cheeses are made from.
East Hill Creamery has taken the idea of traditional farmstead cheese and elevated it. By using raw milk exclusively from their own dairy farm they are able to guarantee quality from pasture to plate. The terroir of Wyoming County has led us to focus solely on Alpine-style cheeses. They are understandably proud to be a part of Wyoming County’s rich dairy history and proud as well of the artisan cheese they are making, and they look forward to being a part of your celebrations (large or small) for many years to come.
